Chowder Preparation

    Prepare the Base

    In a large pot, add the diced salt pork and cook over medium heat until it renders its fat and becomes crispy, about 5-7 minutes.

    Sauté the Vegetables

    Add the chopped onion and celery to the pot. Sauté until the onion is translucent, about 3-4 minutes.

    Add Potatoes and Broth

    Add the diced potatoes to the pot and stir well. Pour in enough water to cover the potatoes and bring to a boil. Reduce heat and let it simmer for about 10 minutes until potatoes are tender.

    Thicken the Chowder

    In a separate small pan, melt the butter over low heat. Stir in the flour to create a roux and cook for 1-2 minutes until golden. Gradually add the roux to the pot, stirring continuously to avoid lumps.

    Add Quahogs and Milk

    Stir in the chopped quahogs and milk into the pot. Mix well and allow the chowder to simmer for an additional 5-10 minutes.

    Season the Chowder

    Add salt, black pepper, and thyme to the chowder. Adjust the seasoning to taste.

    Serve

    Ladle the chowder into bowls and top with oyster crackers. Enjoy your New England or RI chowder!
