    Prepare the Mushrooms

    Clean the fresh mushrooms with a damp cloth to remove any dirt. Slice the mushrooms and set aside.

    Sauté Onions and Garlic

    In a large pot, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Cook the Mushrooms

    Add the sliced mushrooms to the pot and cook for about 8-10 minutes until they release their moisture and become tender.

    Deglaze with Sherry

    Pour in the sherry wine, scraping the bottom of the pot to deglaze. Allow the sherry to simmer for about 3-4 minutes until it reduces slightly.

    Add Broth and Simmer

    Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 15 minutes, allowing the flavors to meld.

    Blend the Soup

    Using an immersion blender, carefully blend the soup until smooth. Alternatively, you can transfer the soup in batches to a countertop blender. Be cautious with the hot liquid.

    Add Cream and Season

    Stir in the heavy cream, salt, and black pepper. Let the bisque simmer for another 5 minutes.

    Finish with Creme Fraiche

    Remove the bisque from heat and stir in the crème fraîche until fully incorporated.

    Garnish and Serve

    Ladle the mushroom bisque into bowls, garnish with freshly chopped parsley, and serve hot.
