Filling Preparation

    Cook the Ground Beef

    In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

    Add Sofrito and Olives

    Stir in the sofrito and chopped olives. Cook for another 3-5 minutes until heated through. Remove from heat.

    Mix in Cheese

    Add the shredded cheese to the beef mixture, stirring until melted and well combined. Set aside to cool.

Dough Preparation

    Make the Dough

    In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter, and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.

    Incorporate Egg and Water

    Beat the egg and add it to the flour mixture. Gradually add the ice-cold water, mixing until the dough comes together. Do not overmix.

    Chill the Dough

    Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

Assembly and Cooking

    Preheat Oven

    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Roll the Dough

    On a floured surface, roll out the chilled dough to about 1/8-inch thickness. Cut out circles using a round cutter (about 4-5 inches in diameter).

    Fill the Empanadas

    Place a tablespoon of the beef filling in the center of each dough circle. Fold the dough over to create a half-moon shape and press the edges together to seal. Use a fork to crimp the edges for a decorative finish.

    Bake the Empanadas

    Place the filled empanadas on the prepared baking sheet. Bake in the preheated oven for 20-25 minutes, or until golden brown.

    Serve with Sauces

    Serve the empanadas warm with charred chili aioli and chimichurri on the side for dipping.
