Crispy Duck Leg Preparation

    Prepare the Duck Legs

    Season the duck legs with salt and black pepper. Make sure to rub the seasoning thoroughly into the skin and meat.

    Confiting the Duck

    In a large, heavy-bottomed pot, melt the duck fat over low heat. Once melted, add the seasoned duck legs, garlic cloves, and thyme sprigs. Ensure the duck legs are fully submerged. Cook on low heat for about 2.5 to 3 hours until the meat is tender and easily pulled from the bone.

    Prepare the Potatoes

    While the duck is cooking, wash and scrub the fingerling potatoes. Cut them in half lengthwise and set aside.

    Crisping the Duck

    After confiting, preheat the oven to 400°F (200°C). Remove the duck legs from the fat and place them on a baking sheet. Roast in the oven for about 20-25 minutes until the skin is crispy and golden.

    Cooking the Fingerling Potatoes

    In a skillet, heat a few tablespoons of duck fat over medium heat. Add the fingerling potatoes cut-side down and cook for about 15 minutes until golden and crispy, flipping halfway through.

    Serving

    Once the duck legs and potatoes are done, serve the crispy duck leg alongside the crispy fingerling potatoes and drizzle with mole negro. Enjoy!
