Harvesting the Grapes
Select and harvest ripe Cortese, Favorita, and Moscato grapes, ensuring they are free from rot and bruising.

Crushing the Grapes
Crush the harvested grapes gently to release the juice while keeping the skins intact. This can be done using a grape crusher or by hand.

Pressing the Must
Transfer the crushed grapes to a wine press and extract the juice. Collect the juice in a fermentation vessel.

Adding Yeast
Add the yeast to the grape juice to initiate fermentation. Stir gently to incorporate the yeast evenly throughout the must.

Fermentation
Allow the grape juice to ferment for about 10-14 days at a controlled temperature (between 18-22°C) until fermentation is complete.

Sulfite Addition
Add sulfites to the wine to preserve it and prevent further fermentation. Stir gently to mix.

Bottling
Once the wine is stabilized, filter it if necessary and transfer it into clean bottles. Seal with corks or caps and label.
