Preparation Steps

Prepare the Cabbage
Preheat your oven to 300°F (150°C). Cut the cabbage into quarters and remove the core. Place the cabbage pieces in a large baking dish.

Confit the Cabbage
Drizzle the cabbage quarters with olive oil and sprinkle with salt. Cover the dish with aluminum foil and place it in the preheated oven. Cook for about 2 hours until the cabbage is tender.

Make Miso Cream
In a saucepan over low heat, combine the heavy cream and miso paste. Whisk continuously until the miso is completely dissolved and the mixture is smooth. Remove from heat and set aside.

Candy the Hazelnuts
In a skillet, toast the hazelnuts over medium heat until golden brown, about 5-7 minutes. Stir in maple syrup and cook for an additional 2-3 minutes until the nuts are coated and caramelized. Remove from heat and let cool on parchment paper.

Char the Cabbage
Once the cabbage is done cooking, remove it from the oven and increase the oven temperature to 475°F (245°C). Place the cabbage quarters back in the oven for an additional 10-15 minutes to char the edges.

Prepare to Serve
Chop the fresh herbs and set aside. Once the cabbage is charred, remove it from the oven and drizzle with the miso cream. Top with the candied hazelnuts and sprinkle with fresh herbs before serving.
