Brioche French Toast

Prepare the Egg Mixture
In a mixing bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until smooth.

Soak the Brioche
Dip each slice of brioche bread into the egg mixture, ensuring both sides are evenly coated. Let them soak for a few minutes to absorb the mixture.

Cook the French Toast
In a skillet, melt 1 tablespoon of butter over medium heat. Place soaked brioche slices in the skillet and cook for 2-3 minutes on each side until golden brown. Repeat with remaining slices, adding more butter as needed.

Prepare the Rum Bruleed Apples
In a separate skillet, melt the remaining tablespoon of butter over medium heat. Add the sliced apples and brown sugar. Cook for about 5 minutes, stirring frequently, until the apples are soft and caramelized.

Add Rum
Carefully add the rum to the skillet with the apples and allow it to flambé (ignite) if desired, or simply simmer for an additional minute to cook off some of the alcohol.

Assemble the Dish
Place the cooked brioche french toast on plates, top with the rum bruleed apples, sprinkle with toasted almonds, and drizzle with koji maple syrup before serving.
