Mashing
Start by heating 5 gallons of water in your brew kettle to approximately 165°F (74°C).

Mixing Grains
Once the water is at the right temperature, add the 10 cups of pale malt, 1 cup of caramel malt, and 0.5 cup of crystal malt. Stir well to ensure there are no dry clumps. Maintain the temperature around 150°F (65°C) for about 60 minutes.

Sparging
After mashing, sparge (rinse) the grains with additional hot water (around 170°F or 77°C) to extract the sugars. Collect the wort in your brew kettle.

Boiling
Bring the wort to a boil, then add 2 oz of Cascade hops and boil for 60 minutes. Add the 1 oz of Centennial hops during the last 15 minutes of the boil.

Cooling the Wort
Once the boiling is done, cool the wort to below 70°F (21°C) as quickly as possible using a wort chiller or an ice bath.

Fermentation
Transfer the cooled wort to a sanitized fermenter, add the yeast, and seal with an airlock. Allow it to ferment at around 68°F (20°C) for 1-2 weeks.

Bottling
Once fermentation is complete, dissolve 3 oz of priming sugar in 2 cups of boiling water. Add this mixture to your bottling bucket, then transfer the beer from the fermenter to the bottling bucket, mixing gently to avoid oxidation.
