Preparing the Batter

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, cornstarch, and baking powder until well combined.

Add Wet Ingredients
Create a well in the center of the dry ingredients and add the ice-cold water and egg yolk. Mix gently until just combined. The batter should be slightly lumpy.
Preparing the Vegetables

Prepare Vegetables
Wash and peel the carrot and sweet potato. Cut all vegetables into uniform sticks or slices to ensure even cooking.

Blanch Green Beans
Blanch the green beans in boiling water for 2 minutes, then immediately transfer them to an ice bath to stop the cooking process. Drain and set aside.
Frying

Heat Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Coat Vegetables
Dip each vegetable piece into the batter, allowing excess to drip off.

Fry the Vegetables
Carefully place the battered vegetables into the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry for 2-3 minutes or until golden brown.

Drain and Season
Using a slotted spoon, remove the tempura from the oil and place on paper towels to drain excess oil. Sprinkle with salt while still hot.
