Preparation

    Prepare the Udon Noodles

    Bring a pot of water to a boil. Add the udon noodles and cook according to the package instructions, usually for about 8-10 minutes. Drain and set aside.

    Prepare the Beef

    Slice the beef sirloin thinly against the grain. In a bowl, combine the sliced beef with soy sauce, sesame oil, minced garlic, and minced ginger. Marinate for at least 15 minutes.

    Cook the Beef

    In a large pan or wok, heat a tablespoon of oil over medium-high heat. Add the marinated beef and stir-fry for about 3-4 minutes until the beef is browned and cooked through. Remove the beef from the pan and set aside.

    Cook the Vegetables

    In the same pan, add the carrots and bell pepper. Stir-fry for about 2-3 minutes until they start to soften. Add the spinach and cook for another minute until wilted.

    Make the Broth

    Pour in the beef broth and mirin. Bring to a simmer and season with salt and pepper to taste.

    Combine Everything

    Add the cooked udon noodles and beef back to the pan. Toss everything together to heat through and combine flavors for about 2-3 minutes.

Serving

    Serve and Garnish

    Ladle the beef udon into bowls. Garnish with chopped green onions, sesame seeds, and chili flakes as desired.
