Prepare Sushi Rice

    Rinse the Rice

    Place sushi rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch.

    Cook the Rice

    In a rice cooker or pot, combine the rinsed sushi rice and 1.25 cups of water. Cook according to rice cooker instructions or bring to a boil, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it sit covered for 10 minutes.

    Season the Rice

    In a small bowl, mix together rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spatula. Allow the rice to cool to room temperature.

Prepare Spicy Tuna Filling

    Prepare Tuna

    Finely chop the sushi-grade tuna and place it in a bowl.

    Mix Dressing

    In the bowl with the tuna, add mayonnaise, Sriracha sauce, chopped green onions, and sesame oil. Mix well until the tuna is evenly coated.

Prepare Vegetables

    Slice Avocado

    Cut the avocado in half, remove the pit, and slice it thinly.

    Slice Cucumber

    Cut the cucumber into thin strips or julienne.

Assemble the Rolls

    Prepare Nori

    Lay a sheet of nori on a bamboo sushi mat, shiny side down.

    Add Rice

    Wet your hands to prevent sticking. Take about 1/2 cup of sushi rice and evenly spread it over the nori, leaving a 1-inch border at the top.

    Add Fillings

    Place a line of spicy tuna mixture, avocado slices, and cucumber strips across the center of the rice.

    Roll the Sushi

    Starting from the end closest to you, roll the sushi away from you using the mat to help shape it into a tight roll. Press gently as you roll to keep the fillings in.

    Cut the Roll

    Use a sharp knife to slice the roll into 6-8 pieces. Clean the knife with a damp cloth between cuts.
