Mochi Dough Preparation

    Mix Dry Ingredients

    In a mixing bowl, combine sweet rice flour and sugar. Mix well to ensure that the sugar is evenly distributed.

    Add Water

    Gradually add water to the dry ingredients, stirring continuously until you achieve a smooth batter.

    Cook the Mixture

    Transfer the batter to a microwave-safe bowl and cover it with plastic wrap, leaving a small vent for steam to escape. Microwave on high for 1 minute, stir, and then microwave for an additional 1-2 minutes until the mixture becomes thick and sticky.

    Cool the Dough

    Remove the bowl from the microwave and let the mochi dough cool for about 10 minutes until it is manageable to touch.

Mochi Assembly

    Prepare the Surface

    Dust a clean surface with cornstarch to prevent sticking. Place the mochi dough on the surface.

    Shape the Mochi

    Using your hands, flatten the mochi dough until it is about 1/4 inch thick. Use a cookie cutter or a glass to cut out circles of mochi dough.

    Fill with Ice Cream

    Scoop a small amount of ice cream (about 1-2 tablespoons) and place it in the center of each mochi circle. Quickly fold the edges of the mochi over the ice cream and pinch to seal.

    Wrap and Freeze

    Wrap each mochi ice cream in plastic wrap or place in an airtight container. Freeze for at least 2 hours or until firm.
