Preheat the oven
Preheat your oven to 325°F (160°C).

Prepare the crust mixture
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

Form the crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer.

Bake the crust
Bake the crust in the preheated oven for 10 minutes. Remove from the oven and let it cool while preparing the filling.

Mix the cream cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

Add sugar and green tea
Gradually add the granulated sugar and green tea powder (matcha) to the cream cheese, mixing until fully incorporated.

Incorporate sour cream and vanilla
Add the sour cream and vanilla extract, mixing well until the mixture is smooth.

Add eggs
Add the eggs one at a time, mixing well after each addition to ensure a smooth batter.

Mix in heavy cream
Finally, stir in the heavy cream until just combined.

Pour into crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but slightly jiggly.

Cool and chill
Once baked, turn off the oven and leave the cheesecake inside with the door slightly ajar for 1 hour. Then, remove it and let it cool at room temperature before refrigerating for at least 4 hours or overnight.
