Prepare Sushi Rice

    Rinse the Rice

    In a fine mesh sieve, rinse the sushi rice under cold water until the water runs clear. This removes excess starch and helps achieve the perfect texture.

    Cook the Rice

    In a medium pot, combine the rinsed sushi rice and 2.5 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for about 20 minutes, or until the water is absorbed. Remove from heat and let it sit, covered, for 10 minutes.

    Season the Rice

    In a small bowl, mix together the rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice using a wooden spoon or rice paddle. Allow the rice to cool to room temperature.

Prepare Fillings

    Prepare the Crab

    If using imitation crab, shred it into bite-sized pieces. If using fresh crab, flake the meat into smaller chunks.

    Slice the Avocado

    Cut the avocado in half, remove the pit, and carefully scoop the flesh out with a spoon. Slice the avocado into thin strips.

    Slice the Cucumber

    Cut the cucumber in half lengthwise, remove the seeds with a spoon if desired, and then slice it into thin strips.

Assemble California Rolls

    Lay Out the Nori

    Place a bamboo sushi mat on a clean surface. Lay a sheet of nori, shiny side down, on the mat.

    Spread the Rice

    With wet hands, take about 1 cup of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Add Fillings

    In the center of the rice, layer the crab meat, avocado slices, and cucumber strips.

    Roll the Sushi

    Using the bamboo mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll. Seal the edge of the nori with a little water.

    Slice the Rolls

    Using a sharp, wet knife, slice the roll into 6-8 pieces. Wipe the knife with a wet cloth between cuts to keep the slices clean.

Serve

    Plate the Rolls

    Arrange the sliced sushi on a platter. Serve with soy sauce, wasabi, and pickled ginger on the side.
