Warm Apple Cake

Prepare the Apples
In a large mixing bowl, combine the sliced apples, brown sugar, cinnamon, and vanilla extract. Toss to coat the apples well. Let sit for 15 minutes to allow the sugar to draw out the juices.

Make Brown Butter
In a saucepan over medium heat, melt the unsalted butter. Continue cooking, stirring frequently, until the butter turns golden brown and develops a nutty aroma, about 5-7 minutes. Remove from heat and set aside to cool slightly.

Assemble the Cake
Preheat the oven to 375°F (190°C). Roll out one sheet of puff pastry on a floured surface and place it in a greased pie dish. Pour the apple mixture into the pastry. Drizzle the brown butter over the apples. Roll out the second sheet of puff pastry and place it over the apples, sealing the edges.

Bake
Cut a few slits in the top pastry to allow steam to escape. Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the apples are tender.

Serve
Remove from the oven and let cool for a few minutes. Serve warm with scoops of sorbet on the side.
