Prepare the Sirloin
Wrap the sirloin steak tightly in plastic wrap and freeze for about 1 hour until firm. This makes it easier to slice thinly.

Pickle the Heirloom Mushrooms
In a small bowl, combine white wine vinegar, olive oil, salt, and black pepper. Add the sliced heirloom mushrooms and let them marinate for at least 30 minutes.

Make the Black Truffle Aioli
In a mixing bowl, combine mayonnaise with black truffle oil, salt, and pepper. Mix well until smooth and creamy.

Slice the Sirloin
Once the sirloin is firm, remove it from the freezer and slice it as thinly as possible using a sharp knife.

Assemble the Carpaccio
Arrange the thin slices of sirloin on a chilled plate. Drizzle with black truffle aioli and top with the pickled heirloom mushrooms and shaved parmesan cheese.
