Prepare the Fries
Wash and peel the Russet potatoes. Cut them into thin fries, about 1/4 inch thick.

Heat the Oil
In a large pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the cut fries to the hot oil in batches, avoiding overcrowding. Fry until golden brown and crispy, about 4-5 minutes per batch. Remove with a slotted spoon and drain on paper towels.

While still hot, sprinkle the fries with salt and black pepper to taste.

Drizzle the hot fries with truffle oil, then toss with grated Parmesan cheese and chopped parsley.
