Prepare the Vegetables
Wash and slice the carrots into thin rounds. Cut the delicata squash in half, scoop out the seeds, and slice into half-moons. Trim the radishes and slice them thinly.

Cook the Snow Peas
Bring a pot of water to a boil. Blanch the snow peas for about 2 minutes until bright green. Remove and plunge into ice water to stop cooking. Drain and set aside.

Roast the Squash
Preheat the oven to 400°F (200°C). Toss the delicata squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until tender and slightly caramelized.

Assemble the Salad
In a large bowl, combine the blanched snow peas, sliced carrots, roasted delicata squash, and radishes.

Add the Vinaigrette
Drizzle with apple cider vinaigrette and toss gently. Top with shaved or grated Parmesan cheese before serving.
