Method
Preparation
- 1
Make the Tart Crust
In a mixing bowl, combine almond flour, unsalted butter, sugar, egg yolk, vanilla extract, and a pinch of salt. Mix until a dough forms. Press the dough into a tart pan and chill for 30 minutes.
- 2
Pre-bake the Tart Crust
Preheat the oven to 350°F (175°C). Bake the chilled tart crust for 15-20 minutes or until lightly golden. Allow to cool.
- 3
Prepare the Salted Caramel
In a saucepan over medium heat, melt the granulated sugar until it turns a golden-brown caramel. Carefully stir in the heavy cream and butter until smooth. Remove from heat and stir in salt.
- 4
Make the Custard
In a bowl, whisk together the eggs and vanilla extract. Gradually add the warm caramel to the eggs, whisking constantly to prevent curdling. Strain the mixture through a fine-mesh sieve into the cooled tart crust.
- 5
Bake the Custard
Bake the tart at 325°F (160°C) for 25-30 minutes or until the custard is set. Allow to cool to room temperature, then refrigerate for at least 2 hours.
