    Prepare the Salt Crust

    In a large bowl, combine the coarse sea salt with the egg whites and mix until well combined. The mixture should be moist but not overly wet.

    Prepare the Branzino

    Rinse the branzino under cold water and pat dry with paper towels. Drizzle the inside of the fish with lemon juice and olive oil, and stuff with fresh snipped herbs.

    Assemble the Salt Crust

    Spread a thin layer of the salt mixture on a baking sheet. Place the branzino on top and cover completely with the remaining salt mixture, ensuring it is well sealed.

    Bake the Fish

    Preheat the oven to 400°F (200°C). Bake the branzino in the salt crust for about 25-30 minutes.

    Prepare Seasonal Accompaniments

    While the fish is baking, prepare your seasonal vegetables by steaming or sautéing them with a drizzle of olive oil and seasoning with salt.

    Serve the Dish

    Remove the baking sheet from the oven and let it rest for a few minutes. Carefully crack open the salt crust using a mallet or the back of a spoon, and remove the branzino. Serve with lemon wedges and seasonal vegetables.
