    Prepare the Cheese Mousse

    Soak gelatin sheets in cold water for 5 minutes. In a mixing bowl, beat the cream cheese and sugar until smooth. In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture. Heat a small portion of the cream in a saucepan until warm, then dissolve the soaked gelatin sheets in it. Add the gelatin mixture to the cheese mousse and mix well. Add red food coloring and mix until evenly colored. Transfer the mousse to serving glasses and refrigerate for at least 2 hours.

    Prepare the Hazelnut & Chocolate Snow

    In a bowl, mix the finely ground hazelnuts, cocoa powder, and powdered sugar until well combined. Spread the mixture on a baking sheet and bake in a preheated oven at 160°C (320°F) for about 10 minutes until slightly toasted. Let it cool before using.

    Prepare the Strawberry Lemon Gel

    Soak 1 gelatin sheet in cold water. In a saucepan, combine the pureed strawberries, lemon juice, and sugar. Heat gently until the sugar dissolves. Remove from heat and add the soaked gelatin, stirring until fully dissolved. Pour the mixture into a shallow dish and refrigerate until set, about 1 hour. Once set, cut into small cubes or use a blender to create a gel consistency.

    Assemble the Dessert

    Once the cheese mousse is set, top each glass with the strawberry lemon gel and sprinkle with hazelnut and chocolate snow. Serve chilled.
