    Prepare the Fish

    Preheat your oven to 400°F (200°C). Rinse the branzino under cold water and pat dry with paper towels. Make three diagonal cuts on each side of the fish.

    Make the Baste

    In a small bowl, mix olive oil, minced garlic, juice of half a lemon, salt, and black pepper.

    Season the Fish

    Rub the garlic and lemon mixture all over the fish, ensuring it gets into the cuts. Season the cavity of the fish with salt and pepper.

    Prepare the Vegetables

    Cut the heirloom potatoes into quarters, slice the Vidalia onion, and halve the radishes. Toss the vegetables in a bowl with olive oil, salt, and black pepper.

    Roast the Fish and Vegetables

    In a large oven-safe skillet, add the vegetables and place the seasoned fish on top. Squeeze the remaining lemon half over the dish. Roast for 20-25 minutes or until the fish is cooked through and flakes easily.

    Once cooked, remove from the oven, garnish with fresh parsley, and serve immediately.
