Grilled Spanish Octopus

Preparation and Grilling

    Prepare the Octopus

    In a large pot, bring water to a boil. Add the octopus and boil for 30-40 minutes until tender. Remove and let cool.

    Marinate

    In a bowl, combine olive oil, lemon juice, minced garlic, paprika, salt, and black pepper. Add the cooled octopus, making sure it's well coated. Marinate for at least 1 hour.

    Crisp the Capers

    In a small pan, heat a little olive oil over medium heat. Add the capers and fry until crispy. Drain on paper towels.

    Grill the Octopus

    Preheat the grill to medium-high heat. Grill the marinated octopus for about 3-4 minutes on each side until it gets a nice char.

    Serve

    Slice the grilled octopus and arrange it on a plate. Top with crispy capers and raw sweet Vidalia onion slices. Drizzle with additional olive oil and lemon juice if desired.
