    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes. Pat it dry with a paper towel.

    Season the Steak

    Sprinkle salt and black pepper evenly on both sides of the steak.

    Heat the Pan

    In a cast-iron skillet, heat the olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Add the steak to the hot skillet and sear for about 4-5 minutes on the first side without moving it.

    Flip and Add Aromatics

    Flip the steak and add garlic cloves, rosemary, and butter to the pan. Cook for another 4-5 minutes for medium-rare, basting the steak with the melted butter and aromatics.

    Check Temperature

    Use a meat thermometer to check that the internal temperature reaches 130°F (54°C) for medium-rare.

    Rest the Steak

    Remove the steak from the skillet and let it rest on a cutting board for 5-10 minutes before slicing.

    Slice against the grain and serve with your choice of sides.
