    Prepare the Lobster

    Preheat your broiler. Carefully split the lobsters in half lengthwise and place them on a baking sheet, shell side down.

    Broil the Lobster

    Brush the lobster meat with melted butter and season with salt and pepper. Broil for about 8-10 minutes until the meat is opaque and cooked through.

    Cook the Mushrooms

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the Hen Of The Woods mushrooms and sauté until golden brown and tender, about 5-7 minutes. Season with salt and pepper to taste.

    Prepare the Brussels Sprouts

    Trim and halve the Brussels sprouts. In another pot, boil water and blanch the sprouts for about 3-4 minutes until bright green. Drain and toss with olive oil, salt, and pepper.

    Cook the Yukon Potatoes

    Boil the Yukon potatoes in salted water until fork-tender, about 15-20 minutes. Drain and mash with remaining butter and season with salt and pepper.

    Make the Squash Espuma

    In a blender, combine cooked squash (about 1 cup), a bit of cream (1/2 cup), salt, and pepper. Blend until smooth and frothy. Transfer to a saucepan and warm it gently over low heat.

    Serve

    Plate the lobster halves alongside the sautéed mushrooms, Brussels sprouts, and mashed Yukon potatoes. Drizzle with the squash espuma and serve with drawn butter and lemon wedges.
