    Prepare Puff Pastry

    Preheat your oven to 400°F (200°C). Roll out the puff pastry sheets and cut them to fit into your tart pan. Press the pastry into the pan and prick the bottom with a fork. Bake for 15-20 minutes until golden brown. Let it cool.

Poached Rhubarb

    Poach the Rhubarb

    In a saucepan, combine sugar and water over medium heat, stirring until the sugar dissolves. Add the chopped rhubarb and vanilla extract. Let it simmer for about 10 minutes until the rhubarb is tender. Remove from heat and let it cool.

Cheesecake Mousse

    Prepare the Cheesecake Mousse

    In a small bowl, dissolve the gelatin in 2 tablespoons of water and let it bloom for 5 minutes. In a mixing bowl, beat the cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until combined. In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture, then add the bloomed gelatin. Mix until combined.

    Assemble the Cheesecake

    Pour the cheesecake mousse into the cooled puff pastry crust and smooth the top. Refrigerate for at least 2 hours to set. Once set, top with the poached rhubarb and serve with a scoop of vanilla ice cream.
