Cooking Salmon

Prepare and Roast Salmon
Preheat the oven to 400°F (200°C). Rub the salmon fillets with olive oil, salt, and black pepper. Place on a baking sheet lined with parchment paper and bake for 12-15 minutes or until the salmon flakes easily with a fork. Squeeze fresh lemon juice over the salmon before serving.

Roast Asparagus
While the salmon is baking, prepare the asparagus. Toss the jumbo asparagus spears with olive oil and salt. Spread them out on a separate baking sheet and roast in the oven for 10-12 minutes, or until tender and slightly crispy.
Making Bearnaise Sauce

Prepare Bearnaise Sauce
In a small saucepan, melt the butter over low heat. In another saucepan, combine minced shallots, white wine vinegar, and half of the tarragon. Simmer until reduced by half. Strain the mixture and whisk in the egg yolks. Slowly whisk in the melted butter until the sauce thickens. Season with salt, pepper, and the remaining tarragon.
