Ice Cream Base

Method

Ice Cream Preparation

  1. 1

    Prepare the Ice Cream Base

In a medium saucepan, combine heavy cream, whole milk, and sugar. Heat the mixture over medium heat until the sugar is dissolved. In a separate bowl, whisk egg yolks. Slowly temper the egg yolks with the warm milk mixture, then return to the saucepan. Cook over low heat until the mixture thickens slightly. Remove from heat, stir in vanilla and a pinch of salt. Chill in the refrigerator for at least 4 hours or overnight.

  2. 2

    Churn the Ice Cream

Once the mixture is chilled, pour it into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency. Transfer to an airtight container and freeze for at least 2 hours before serving.

Ice Cream Cone Preparation

  1. 3

    Make the Cone Batter

In a mixing bowl, combine flour, sugar, and salt. In a small saucepan, melt the butter and mix with water and vanilla. Pour the wet mixture into the dry ingredients and stir until smooth.

  2. 4

    Cook the Cones

Preheat a waffle cone maker. Pour a small amount of batter onto the center of the maker and close it. Cook according to the manufacturer's instructions until golden brown. Carefully remove and shape into a cone while still warm. Repeat with the remaining batter.
