Preparation of Lamb Chops

    Marinate the Lamb Chops

    In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Coat the lamb chops with the marinade and let sit for at least 30 minutes.

    Cook the Lamb Chops

    Preheat a grill or skillet over medium-high heat. Cook the marinated lamb chops for about 4-5 minutes on each side, or until they reach your desired doneness.

Preparation of Goat Cheese Polenta

    Cook the Polenta

    In a large saucepan, bring water to a boil. Slowly whisk in the polenta and reduce heat to low. Cook for about 30 minutes, stirring frequently.

    Finish the Polenta

    Stir in the goat cheese, butter, and salt until smooth and creamy. Keep warm until serving.

    Prepare the Tomatoes

    Preheat the oven to 250°F (120°C). Halve the cherry tomatoes and place them on a baking sheet. Drizzle with olive oil and sprinkle with salt.

    Bake in the preheated oven for about 2-3 hours until dried but still soft. Once done, toss with golden raisins and balsamic vinegar.
