    Remove the filet mignon from the refrigerator and let it come to room temperature for about 30 minutes. Pat it dry with paper towels and season both sides generously with salt and black pepper.

    Heat olive oil in a cast-iron skillet over medium-high heat until it's shimmering. Add the filet mignon to the skillet and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

    In the last 2 minutes of cooking, add butter, crushed garlic, and the fresh herb sprig to the skillet. Spoon the melted butter over the steak constantly to baste it and enhance the flavor.

    Remove the filet mignon from the skillet and let it rest on a cutting board for about 5 minutes. This allows the juices to redistribute throughout the meat.
