    Peel the Russet potatoes and grate them using a box grater or a food processor. Place the grated potatoes in a bowl of cold water to remove excess starch.

    Dry the Potatoes

    Drain the grated potatoes and pat them dry with a clean kitchen towel or paper towels to remove as much moisture as possible.

    Season the Potatoes

    In a large bowl, combine the dried grated potatoes with salt and black pepper. If using, finely chop the onion and add it to the mixture.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Cook the Hash Browns

    Add the potato mixture to the skillet in an even layer. Press down firmly with a spatula. Cook for about 5-7 minutes until the bottom is golden brown and crispy.

    Flip and Finish

    Carefully flip the hash browns using a large plate or spatula, adding a bit more oil if needed. Cook for another 5-7 minutes until the other side is golden brown.
