Main Ingredients

Truffle Aioli

Method

Preparing the Tartare

  1. 1

    Chop the Filet Mignon

Using a sharp knife, hand-chop the filet mignon into small, even pieces. Avoid using a food processor to ensure a coarse texture.

  2. 2

    Mix the Ingredients

In a mixing bowl, combine the chopped filet mignon, capers, shallots, and parsley. Mix gently.

  3. 3

    Add Egg Yolks

Carefully fold in the egg yolks into the mixture. Season with salt and pepper to taste.

Making Truffle Aioli

  1. 4

    Combine Ingredients

In a bowl, combine the mayonnaise, truffle oil, minced garlic, and lemon juice. Mix well until smooth.

  2. 5

    Season

Add salt and black pepper to taste. Adjust the amount of truffle oil if a stronger flavor is desired.

Serving

  1. 6

    Plate the Tartare

Using a ring mold, carefully shape the filet tartare on a plate. Serve with a dollop of truffle aioli on the side.

  2. 7

    Garnish

Garnish with additional chopped parsley or microgreens if desired.
