Bacon & Three Cheese
1. Prepare the bacon
Cook the bacon in a skillet over medium heat until crispy. Remove, drain on paper towels, and crumble.
2. Mix the egg mixture
In a bowl, whisk together the eggs, cream cheese, cheddar cheese, mozzarella cheese, parmesan cheese, salt, and black pepper until well combined.
3. Combine ingredients
Fold the crumbled bacon into the egg mixture.
4. Bake
Pour the mixture into greased muffin tins, filling each cup about 3/4 full. Bake at 350°F (175°C) for 20-25 minutes or until set.
Spinach and Feta
5. Sauté the spinach
In a skillet, sauté the fresh spinach over medium heat until wilted. Remove from heat and let cool slightly.
6. Mix the egg mixture
In a bowl, whisk together the eggs, cream cheese, feta cheese, salt, and black pepper until well combined.
8. Bake
Pour the mixture into greased muffin tins, filling each cup about 3/4 full. Bake at 350°F (175°C) for 20-25 minutes or until set.
