    Caramelize the Onions

    In a large pot, melt the butter over medium heat. Add the sliced onions and cook, stirring frequently, until they are golden brown and caramelized, about 30-40 minutes.

    Add Liquid Ingredients

    Once the onions are caramelized, add the dry white wine and cook for an additional 5 minutes, scraping up any brown bits from the bottom of the pot.

    Simmer the Soup

    Add the beef broth, thyme leaves, bay leaf, salt, and black pepper to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for 30 minutes.

    Prepare the Bread and Cheese

    While the soup is simmering, preheat the oven to 350°F (175°C). Place the slices of French bread on a baking sheet and toast in the oven for about 10 minutes until golden. Remove from oven and sprinkle gruyere cheese on top.

    Serve the Soup

    Remove the bay leaf from the soup. Ladle the soup into bowls, top with a slice of the cheesy French bread, and broil in the oven for 2-3 minutes until the cheese is bubbly and golden.
