    Caramelize the Onions

    In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and salt. Cook, stirring occasionally, for about 30-40 minutes until the onions are golden brown and caramelized.

    Add Sherry and Stock

    Once the onions are caramelized, add the dry sherry and stir, scraping any browned bits from the bottom of the pot. Allow the sherry to reduce for about 5 minutes. Then, add the veal stock, thyme, and bay leaf. Bring to a simmer.

    Season and Simmer

    Season the soup with black pepper to taste. Let the soup simmer for an additional 20-30 minutes to blend the flavors. Adjust seasoning if necessary.

    Prepare the Baguette

    While the soup is simmering, slice the baguette into 1-inch thick slices. Toast the slices until golden brown.

    Serve the Soup

    Ladle the soup into bowls. Place a slice of toasted baguette on top of each bowl and sprinkle with Gruyère cheese. Optionally, broil the bowls for a few minutes until the cheese is bubbly and golden.
