    Season the beef tenderloin steaks with salt and crush the black peppercorns. Press the crushed pepper onto both sides of the steaks.

    In a large skillet over medium-high heat, heat the olive oil. Add the steaks and cook for 4-5 minutes on each side for medium-rare, or until desired doneness. Remove steaks and let them rest.

    Make the Sauce

    In the same skillet, add the minced shallots and sauté for 1-2 minutes until soft. Carefully pour in the brandy or cognac and scrape up any browned bits from the bottom of the skillet. Allow the alcohol to cook off for about 2-3 minutes.

    Stir in the heavy cream and bring the mixture to a simmer. Cook for another 3-4 minutes until the sauce thickens slightly. Season with salt to taste.
