Method

Cooking the Prime Rib

    Prepare the Roast

    Preheat the oven to 450°F (230°C). Rub the prime rib with olive oil, salt, black pepper, and garlic powder.

    Roast the Meat

    Place the roast in a roasting pan and roast for 15 minutes. Lower the temperature to 325°F (160°C) and continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare, about 1 hour and 15 minutes.

    Rest the Meat

    Remove the roast from the oven, tent with foil, and let rest for at least 20 minutes before slicing.

Making the Au Jus

    Combine Ingredients

    In a saucepan, combine beef stock, red wine, onion, thyme, and bay leaf. Bring to a boil, then reduce to a simmer for 15-20 minutes until reduced and flavorful.

Preparing Creamy Horseradish

    Mix Ingredients

    In a bowl, combine prepared horseradish, sour cream, lemon juice, and salt. Mix well and refrigerate until serving.

Loaded Baked Potato

    Bake Potatoes

    Preheat the oven to 400°F (200°C). Prick the potatoes with a fork, rub with salt, and bake directly on the oven rack for about 45-60 minutes until tender.

    Load the Potatoes

    Cut open the baked potatoes, fluff with a fork, and add butter, sour cream, cheddar cheese, and green onions.

Creamed Spinach

    Cook Spinach

    In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1 minute. Add spinach and cook until wilted.

    Finish the Dish

    Stir in heavy cream and parmesan cheese. Cook until thickened and heated through.
