Preparation of Schnitzel

    Place the pork loin pieces between two sheets of plastic wrap. Use a meat mallet to pound each piece to about 1/4 inch thickness.

    Set up three bowls: one with flour mixed with salt and pepper, another with beaten eggs, and a third with breadcrumbs.

    Dredge each pork piece in flour, shaking off excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.

Cooking the Schnitzel
