Method

Cooking the Eggs

    Boil the Eggs

    Place the eggs in a single layer in a saucepan and cover with cold water, about an inch above the eggs. Bring to a boil over medium-high heat.

    Simmer and Cool

    Once boiling, cover the saucepan, remove from heat, and let sit for 12 minutes. Afterward, transfer the eggs to a bowl of ice water to cool for 5 minutes.

    Peel the Eggs

    Gently tap the cooled eggs on a hard surface to crack the shell, then peel under running water. Pat the eggs dry with a paper towel.

Preparing the Filling

    Cut and Scoop

    Cut each egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Set the egg whites aside.

    Mix the Filling

    Mash the yolks with a fork and add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper. Mix thoroughly until smooth and creamy.

Assembling the Deviled Eggs

    Using a spoon or a piping bag, fill the egg white halves with the yolk mixture.

    Sprinkle paprika over the filled eggs and top with finely chopped fresh chives.
