Pork Tenderloin

Mushrooms and Gravy

Sub Assembly

Method

Prepare Pork Tenderloin

  1. 1

    Marinate the Pork

In a bowl, combine olive oil, fresh rosemary (chopped), salt, and black pepper. Rub the mixture over the pork tenderloin and let it marinate for at least 30 minutes.

  2. 2

    Grill the Pork

Preheat the grill to medium-high heat. Grill the marinated pork tenderloin for about 20 minutes, turning occasionally, until the internal temperature reaches 145°F. Remove from the grill and let it rest for 5 minutes before slicing into medallions.

Prepare Mushrooms and Gravy

  1. 3

    Sauté Mushrooms

In a skillet, melt the butter over medium heat. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they are tender and golden brown.

  2. 4

    Heat Brown Gravy

In a small saucepan, heat the brown gravy over medium heat until warm, stirring occasionally.

Assemble the Sub

  1. 5

    Toast the Sub Rolls

Cut the sub rolls in half and lightly toast them on the grill or in a toaster until golden brown.

  2. 6

    Layer Ingredients

Place a layer of grilled pork medallions on each toasted sub roll, followed by sautéed mushrooms, a couple of slices of provolone cheese, and drizzle with warm brown gravy.

  3. 7

    Add Onion Straws

Top the sandwiches with onion straws for added crunch and flavor.

Serve

  1. 8

    Serve with Fries

Serve the grilled pork tenderloin subs with a side of fries.
