Preparing the Fish

Make the Batter
In a mixing bowl, combine the flour, baking powder, and salt. Gradually whisk in the cold sparkling water until the batter is smooth and slightly thick.

Heat the Oil
In a deep frying pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish fillets in the hot oil. Fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

Cut the Potatoes
Peel the russet potatoes and cut them into thick strips to form fries.

Soak the Fries
Soak the cut fries in cold water for at least 30 minutes to remove excess starch.

Dry the Fries
Drain and pat the fries dry with paper towels.

Fry the Fries
In the same oil used for the fish, fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove and drain on paper towels, then sprinkle with salt.

Combine Ingredients
In a bowl, mix together the mayonnaise, chopped dill pickle, capers, lemon juice, salt, and black pepper. Stir until well combined.

Cover the tartar sauce and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
