Preparation

    Preheat the oven

    Preheat your oven to 200°C (390°F). Grease four ramekins with butter and dust them with cocoa powder to prevent sticking.

    Melt chocolate and butter

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together using a double boiler or in the microwave in 30-second intervals until smooth. Stir until well combined.

    Mix sugar and eggs

    In a separate bowl, whisk together the granulated sugar and eggs until the mixture is pale and slightly thickened.

    Combine mixtures

    Slowly pour the melted chocolate mixture into the egg mixture while whisking constantly. This will prevent the eggs from cooking.

    Add dry ingredients

    Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Gently fold the mixture until just combined, being careful not to overmix.

Baking

    Fill ramekins

    Evenly distribute the batter into the prepared ramekins, filling them about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

    Cool slightly

    Remove the ramekins from the oven and let them cool for 1-2 minutes.

    Carefully invert each ramekin onto a plate. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream if desired.
