Cook the Fettuccine
Bring a large pot of salted water to a boil. Add the fettuccine pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside.

While the pasta is cooking, season the chicken breasts with salt and black pepper. In a large skillet over medium heat, add olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from skillet, let rest for a few minutes, then slice into strips.

In the same skillet used for the chicken, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant. Pour in the heavy cream, stirring to combine. Bring to a gentle simmer and cook for 2-3 minutes.

Gradually whisk in the grated Parmesan cheese until melted and smooth. Add nutmeg, and season with salt and black pepper to taste. If the sauce is too thick, you can add a little reserved pasta water to reach your desired consistency.

Add the cooked fettuccine to the sauce, tossing to coat the pasta evenly. Add the sliced chicken on top and mix gently to combine.
