Bread Preparation

Mix Dry Ingredients
In a large mixing bowl, combine all-purpose flour, sugar, cinnamon, baking powder, and salt. Whisk together until well mixed.

Combine Mixtures
Pour the wet ingredients into the dry ingredients. Stir gently until just combined; do not overmix. Let the batter rest for about 10 minutes.

Cook the Bread
Heat a griddle or non-stick skillet over medium heat and melt the butter. Once hot, pour about 1/4 cup of the batter onto the skillet for each slice of French toast. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 2-3 minutes until golden brown. Repeat until all batter is used.

Prepare Berries
In a blender, combine mixed berries, honey, and lemon juice. Blend until smooth. If desired, strain through a fine mesh sieve to remove seeds.
Serving

Plate the French Toast
Serve the grilled French toast slices on a plate, drizzle with the fruit puree, and dust with powdered sugar.
