Prepare the Chorizo
In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the chorizo sausage, breaking it up with a spatula. Cook for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.

Scramble the Eggs
In a bowl, crack the large eggs and whisk them together with salt and black pepper until well combined. In the same skillet used for the chorizo, add the eggs and stir gently over medium heat until just set, about 3-4 minutes.

Assemble the Burrito
Lay a flour tortilla on a clean surface. In the center, add a portion of scrambled eggs, followed by the cooked chorizo, a generous sprinkle of shredded cheese, and chopped fresh cilantro.

Wrap the Burrito
Fold the sides of the tortilla over the filling, then roll the tortilla tightly from the bottom up to encase the filling completely. Repeat with the second tortilla.

Heat the Burrito
In the same skillet (or a clean one), place the burritos seam side down. Cook over medium heat for 2-3 minutes on each side until the tortillas are golden brown and crispy. Serve warm.
