Scramble the Eggs
In a medium bowl, crack the eggs and whisk them until well combined. Heat a non-stick skillet over medium heat and add the eggs. Cook, stirring gently, until the eggs are just set. Remove from heat.

Add Cheese and Vegetables
To the scrambled eggs, add the shredded jack cheese, diced roma tomatoes, and sliced scallions. Stir gently until the cheese is melted and everything is well mixed.

Prepare the Tortillas
Warm the flour tortillas in a dry skillet over low heat for about 30 seconds on each side, until pliable.

Assemble the Burritos
Place half of the egg mixture on each warmed tortilla. Fold the sides over and roll tightly. Secure with a toothpick if necessary.

Heat Black Beans
In a small saucepan, heat the canned black beans over medium heat for about 5 minutes or until warmed through. Stir occasionally.

Serve
Place the burritos on a plate, add a serving of warm black beans on the side, and serve with salsa for dipping.
