Preparing the Shrimp Filling

Sauté the Shrimp
In a large skillet, heat the olive oil over medium heat. Add the diced jalapeño and sauté for 2-3 minutes until softened.

Cook the Shrimp
Add the shrimp, salt, and black pepper to the skillet. Cook for 3-4 minutes, stirring occasionally, until the shrimp are pink and opaque.

Add Salsa
Pour in the house salsa, stirring to combine. Cook for an additional 2-3 minutes, allowing the flavors to meld. Remove from heat.
Assembling the Wraps

Prepare the Tortillas
Lay out the spinach tortillas on a clean flat surface.

Add the Filling
Evenly distribute the black beans over each tortilla, followed by the sautéed shrimp mixture.

Add Cheese and Greens
Sprinkle the shredded jack cheese and add a handful of spring greens on top of the shrimp filling.

Wrap the Tortillas
Carefully fold in the sides of the tortilla and then roll it up tightly from the bottom to the top to enclose the filling.

Serve
Cut the wraps in half and serve with a side of chipotle mayo for dipping.
