Focaccia Preparation

Activate the Yeast
In a small bowl, combine warm water and active dry yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and 1/4 cup of olive oil. Mix until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-2 hours, or until doubled in size.

Prepare the Pan
Grease a baking sheet or pan with olive oil. After the dough has risen, punch it down and spread it onto the prepared pan, dimpling the surface with your fingers.

Second Rise
Cover the dough again and let it rise for another 30 minutes.

Preheat and Bake
Preheat the oven to 425°F (220°C). If using, sprinkle fresh rosemary on top. Drizzle with remaining olive oil. Bake for 20-25 minutes until golden brown.

Cool and Slice
Allow the focaccia to cool slightly before slicing it into sandwich-sized pieces.
