    Cook the Brown Rice

    In a saucepan, combine 1 cup of brown rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 45 minutes or until the rice is tender. Fluff with a fork and set aside.

    Prepare the Chicken

    Season the chicken breasts with olive oil, salt, and black pepper. Grill or pan-cook over medium heat for about 6-7 minutes on each side or until fully cooked. Let rest before slicing.

    Prepare the Salad

    In a large bowl, toss the spring mix with red wine vinaigrette. Dice the cucumber, tomato, and banana pepper, and add them to the salad mix.
