Preparation of Ingredients

    Prepare the 63-Degree Egg

    Sous vide the eggs at 63 degrees Celsius (145.4 degrees Fahrenheit) for 45 minutes. Once cooked, place them in an ice bath to stop the cooking process.

    Prepare the Meat

    Slice the Spam and frankfurter sausages into bite-sized pieces. Set aside.

    Prepare the Tofu

    Drain the tofu and cut it into cubes. Pat dry with a paper towel to remove excess moisture.

    Prepare the Mushrooms

    Clean the maitake mushrooms and tear them into smaller pieces.

    Chop the Kimchi

    Chop kimchi into smaller pieces if necessary.

    Slice the Green Onions

    Slice the green onions thinly, separating the white and green parts.

Cooking the Jigae

    Make the Broth

    In a large pot, combine 4 cups of water, gochujang, soy sauce, sesame oil, minced garlic, and the white parts of sliced green onions. Bring to a boil over medium heat.

    Add the Meat and Tofu

    Once the broth is boiling, add the sliced Spam, frankfurter sausages, and cubed tofu. Let it simmer for about 10 minutes.

    Add the Mushrooms and Kimchi

    Stir in the maitake mushrooms and chopped kimchi. Allow simmering for another 5 minutes.

    Cook the Ramen

    Add the ramen noodles to the pot and cook according to package instructions, usually around 3-4 minutes.

    Season the Jigae

    Taste the broth and season with salt and black pepper as needed.

    Serve

    Ladle the jigae into bowls. Top each serving with a slice of American cheese and the soft-cooked 63-degree egg. Garnish with the green parts of the green onions.
